If you know me, you know I love making cakes!

Monday, Tuesday, Wednesday, any day that ends in ‘day’ is a good day for a tower of gorgeous deliciousness.

And Valentine’s Day to celebrate Valentine’s Day is no exception!

My favorite chocolate cake of late has been The Stay at Home Chef’s Most Amazing Chocolate Cake.

The Most Amazing Chocolate Cake

·       butter and flour for coating and dusting the cake pan

·       3 cups all-purpose flour

·       3 cups granulated sugar

·       1 1/2 cups unsweetened cocoa powder

·       1 tablespoon baking soda

·       1 1/2 teaspoons baking powder

·       1 1/2 teaspoons salt

·       4 large eggs

·       1 1/2 cups buttermilk (I just add a Tablespoon of lemon juice to milk for 5 minutes).

·       1 1/2 cups warm water

·       1/2 cup vegetable oil

·       2 teaspoons vanilla extract

Chocolate Berry Frosting

·       1 1/2 cups butter softened

·       1 1/2 cups unsweetened cocoa powder

·       3 teaspoons vanilla extract

·       7-8 cups powdered sugar

·       1/2 cup frozen berries (thawed & smashed with juice)

Blend per the usual cake recipes: cream sugar & butters, blend in wet ingredients then slowly add mixed drys.

Bake for 350 Degrees for approximately 35 minutes.

I baked & cooled my cake into 4, 6” tins. Once cooled, I pop my cakes into the freezer for 30 minutes then build my cake frosting generously.

After my layer cake was frosted and ‘crumb layered’. I put in back in the fridge over night.

The next morning I decided it needed an extra layer of vanilla buttercream to give it a little more dreamy white color. So, I frosted, added purple mums we had and voila.
